Meet Our Executive Chef: Samuel Drake Jones

Introducing Samuel Drake Jones, the culinary mastermind leading the kitchen at Sweetbriar. Born in Paris, France, Chef Sam’s early years were steeped in the rich culinary traditions of the city. His love for food blossomed at the age of eight, but his journey would soon take him across the globe.

At a young age, Sam moved with his family to California, where he began to embrace his new life in America. Tragically, at 16, he faced the profound loss of his mother, a life-altering event that led him to London, UK, to live with his father and finish his teenage years. It was during this time that Sam’s passion for cooking truly ignited. Finding comfort in the kitchen, he spent countless nights preparing meals for himself and his sister, discovering that cooking was not just a necessity, but a source of solace and a way to process his grief.

By the age of 18, Sam returned to the United States, determined to pursue his dream of becoming a chef. His journey led him to several acclaimed eateries in California, including the renowned Campfire, where he experienced the magic of live wood-fire cooking for the first time. This experience shaped his approach to cuisine, instilling a love for the flavors and techniques that only an open flame can provide.

Chef Sam’s culinary path eventually brought him to New York City, where he honed his skills at prestigious restaurants, including Bobby Flay’s Gato. His dedication and hard work culminated in another significant milestone: after living in America for nearly 20 years, he proudly became a U.S. citizen at the age of 30.

Today, Chef Sam leads the kitchen at Sweetbriar and the Roof at Park South, where his modern American cuisine is influenced by his personal journey and enriched by his mastery of live-fire cooking. When you dine with us, you’ll experience comforting dishes that tell a story—Chef Sam’s story—served with the warmth and passion that only a true culinary artist can bring to the table.
