Ivan Papic, Beverage Director at Sweetbriar, began his journey into cocktail culture in the late 90s, starting as a food runner at Lot61. Inspired by the vibrant atmosphere behind the bar, he transitioned into bartending and has been innovating ever since.

Ivan's fascination with mixology lies in merging culinary techniques with cocktail creation. Drawing inspiration from classic dishes, he crafts drinks that surprise and delight. His use of unique infusions, such as chamomile-infused gin and chai-infused dark rum, showcases his inventive spirit. His cocktails often feature teas, herbs, and spices, sourced from specialty stores like Kalustyan's, adding depth and complexity to his creations.

Signature Cocktails and Pairings

One of Ivan's standout creations is "El Barrio," a cocktail inspired by the classic Manhattan. This drink blends Ilegal Reposado Mezcal with Galliano and Fernet Branca, striking a perfect balance between smokiness, sweetness, and bitterness. For perfect pairings, Ivan recommends a 50/50 Gin Martini with oysters or a Coffee Old Fashioned alongside Sweetbriar’s Chocolate Mousse.
